Then I evaluated a variety of different types of bread pans (4 metal, 1 bakersware, 3 cast iron, 1 glass, 2 stoneware, & 1 natural stoneware). The goal was to design a recipe that would give consistent results. Then I took my 11 most popular recipes (ingredients) and adapted them to the bread pan method. Bottom-line, I have a process for making 5 loaves at a time. I can make one batch, then put a loaf in 5 different bread pans and they will all have an internal of 200+ degrees F.
